Oreo Ice Cream Cake Recipe

My youngest son's birthday was last Monday. He just turned 4. I can't believe how fast the years go by. He is no longer a baby but a little boy. When I asked him what type of cake he wanted for his birthday, he specifically requested the Oreo cake. 
I figured I would share it with you all, I know it's not a healthy treat, but it is a great cake for kids and adults on special occasions. It is also pretty easy to make. 

A little background on how I found the recipe, my older son (who was probably about 3 at the time) used to love watching cooking YouTube videos on the Ipad. For some reason he really enjoyed the Laura in the Kitchen videos and he came across this Oreo Ice Cream Cake video and asked me to make it. I loved how it was easy to make and not many ingredients are needed. I made the cake with just three main ingredients but in Laura's recipe a couple more are included. What is great about this is you can add as many topping or ingredients you want for inside/outside the cake.

Here is the recipe:


Oreo Ice Cream Cake 

Serves 8-10
Ingredients I used:
1 Gallon of Vanilla Ice Cream
½ cup Store Bought Chocolate Fudge Sauce
1 Large Bag of Oreo Cookies
Process:
1) Take the ice cream out of the freezer and leave at room temperature for 30 minutes so it can start to soften (this is so that it makes it easier to work with).

2) Line a 9 inch spring form pan with some plastic wrap and set aside. I had no idea what a spring form pan was until I found this recipe. This is what a spring form pan looks like. It's a normal pan, but the sides of the pan can lift up once you loosen the side latch and the base remains.
3) Line the inner edge of your pan with a row of Oreo cookies, also line the bottom of the pan with Oreo halves.
4) Place the rest of the Oreo cookies in a large zip lock bag, and smash them with a rolling pin (I used my wooden pestle) until the cookies become coarse crumbs. I used a family pack, so I did not use all of the rest of the oreos. I played it by ear and just put in how much I wanted in the cake and for the top layer. I had my 5 year old help me with the smashing part. :)
5) In a large bowl mix together the ice cream, chocolate sauce, and the Oreo crumbs, saving ½ cup of the crumbs for the topping later. Mix everything together well to combine and add mixture to the pan outlined with the Oreos. Level out the top of the cake and top with the reserved Oreo crumbs and if you like, some chocolate sauce. 
6) Place the cake in the freezer and let it set for 4 to 6 hours.
When ready to serve let the Oreo cookies on the side of the cake be the guide for even slices and also beautiful presentation.
